Ingredients: 3pounds tart baking apples (such as Fuji, Cortland, or Gala) peeled, cored, and cut into 1-inch cubes; ½cup granulated sugar; 4tablespoons (½ stick) unsalted butter; 1vanilla bean; ¼cups fresh apple cider (or apple juice); 3tablespoons lightly packed dark brown sugar; ½cup dry white wine; 1tablespoon cornstarch; 1teaspoon freshly grated nutmeg (grated with a fine Microplane zester or a nutmeg grater from a whole nutmeg); ¼teaspoon ground cinnamon; 3cups dry white wine; 1 ½cups granulated sugar; 1cinnamon stick; 1whole star anise; 1whole clove; 1strip of orange peel (peeled with a vegetable peeler); 3quinces, peeled, cored, and cut into 1-inch cubes; 2tablespoons heavy cream; 3tablespoons cold water; 2cups unbleached all-purpose flour, plus more for dusting; 2teaspoons Kosher salt; ½pound (2 sticks) unsalted butter, cut into 1-inch cubes and frozen for at least 1 hour, plus more for buttering the pan; ¾cup + 3 tablespoons unbleached all-purpose flour; ¾cup + 3 tablespoons granulated sugar; ½teaspoon ground cinnamon; 1stick + 6 tablespoons unsalted butter, cold; 1 ¼cups rolled oats; Vanilla gelato or ice cream, for serving (optional)
